Mix all the ingredients for 2 minutes at SLOW speed with a paddle.
Mix further 3 minutes at MEDIUM speed, until a homogenous batter is obtained.
For about 400gr batter, bake for about 35-37 minutes at 180°-200°C in dec or 150°C in conv oven.
Crème Diplomat
Whip the Ambiante until you get stiff peaks of whipped cream and fold through to the Cremfil Silk.
Fruit filling
Scoop the Topfil Mango Smooth into a piping bag and pipe in between and on top of the layer cake and cream.
Whipped Cream
In the mixing bowl with a whisk attachment, whip the Ambiante to a stiff peak.
Assembling
Cut 3 discs of 18cm diameter of Mango cake, pipe in between each 120 grams of diplomate cream and 80 grams of Topfil Mango Smooth finish with the whipped Ambiante and a layer of Topfil Mango Smooth on top.
